枕頭蛋糕 (海綿蛋糕)

第一步驟 蛋黃麵糊

用1.低筋麵粉(600g)築粉牆,

在中間放入2.沙拉油(375g)+3.橘子水(268g)+4.蛋黃(500g的1/3)

拌勻後,再加入4.泡打粉(7g)拌勻

再加入6.香草精(10g)+剩下的蛋黃~拌勻

 

第二步驟 蛋白麵糊

7.蛋白(700g)+8.塔塔粉(1茶匙)+9.鹽(一茶匙)快速打到4分發 –> 要用攪拌機

看起來有紋路~量會比原來大一倍 (個人覺得看起來很像蛋糕上的奶油)

加入9.砂糖(600g) –>攪拌機轉中慢速

打發至9分發 –>蛋白糊完成

 

第三步驟 蛋黃麵糊+蛋白麵糊

將1/3蛋白麵糊加入蛋黃麵糊拌勻 (看不出來有大理石紋)

再將剩下的蛋白倒入

拌勻

 

第四步驟  

放入烤箱烤…約15~20分 (上火200/下火150)

看到表面上色~降些溫度~(上火170/下火170)

表面劃一刀後，上火關掉，氣門打開，繼續悶烤完成。

感覺爸爸蠻愛吃這種海綿蛋糕~

口感單純+鬆軟

媽媽吃了也讚不絕口~說好好吃!!

還說要跟我合作開一家店 =_+ 

真是想太多了~~….
