北海道戚風蛋糕
蛋糕體
(一)蛋黃糊
將 蛋黃250g + 砂糖 50g 打發至乳白色, 將糖溶解至拌勻
接著依序加入 沙拉油 (190g)
鮮奶 130g
低粉 300g
泡打粉 3g
(二)蛋白糊
蛋白(450g)+塔塔粉(1茶匙)+鹽(1/4茶匙) 攪拌至4分發 –>用攪拌機
至有紋路~類似奶油~抓起呈45度角
再將攪拌機轉至中慢速
把糖 (50g)
(三)將前二項混合~
先拿1/3蛋白加入蛋黃糊,拌勻 (至看不見大理石紋)
再整個加入剩下的蛋白拌勻
(四)將餡料擠入四方型的烘烤盒(估35~40個)
約至八分滿
(五)放入烤箱烤 180/150
10-15分
內餡
(一)保久乳400g+卡士達粉160g 打發
再加上已打發的動物性鮮奶油~攪拌完成
用花嘴將內餡擠入蛋糕體內,
再表面灑上防潮糖粉。
